A 33,000 litre tanker overturned at Ojota Bridge, near Abiola Garden, inward Old Toll Gate in Lagos, on Wednesday.
The crash blocked the road completely.
Police say brake failure is the likely cause.
Some residents were seen scooping groundnut oil from the road, drains and other exposed spots.
LASTMA has warned people not to eat or sell the oil, because it may be contaminated by road debris, pollution and drain waste.
General Manager Olalekan Bakare-Oki said the urge to save spilled goods should not put public health at risk.
LASTMA's Rescue and Recovery Team, with two heavy tow vehicles, removed the tanker and is directing traffic to ease congestion.
The police, Federal Road Safety Corps, Nigeria Union of Petroleum and Natural Gas Workers, Lagos State Fire and Rescue Service and Lagos State Neighbourhood Safety Agency also responded.
